In order to evaluate the Asamiya Yabukita Matcha, we carefully assessed both its texture and flavor. We considered its potential for dryness, sweetness, minerality, or acidity and examined its thickness and richness, or mouthfeel. Finally, we took note of the vegetal flavor, a consistent profile across all types of matcha, to gain a thorough understanding of this particular variety.

Step 1 - Observing the Appearance

The color of the matcha powder is a slightly darker olive green color

Step 2 - Assessing the Aroma

The aroma coming off the chawan as the powder is mixed with the water is slightly more vegetal, with notes of spring grass.

Step 3 - Tasting the Tea

The tea starts out smooth before opening up to a more grassy and citrusy taste profile, followed by a dryness in the finish. There is a slight walnut-bitterness that lingers in the palate.

How to prepare the tea

To prepare the Asamiya Yabukita Matcha, follow these basic steps to get the perfect bowl of matcha tea. While you have room to simplify and get creative with the process, it is recommended to follow these steps closely initially to practice the proper matcha preparation technique.

    Sift 2 grams of matcha powder into a bowl to remove any clumps caused by humidity.

    Heat the water up to 70 degrees Celsius or 160 degrees Fahrenheit.

    Add approximately 1 tablespoon of water to the bowl and mix the matcha powder into a smooth paste, ensuring even distribution. Pour 100ml of water into the bowl.

This tea is a result of Takatomo Katagi's meticulous craftsmanship, carrying on the legacy of his father. His father was a trailblazer in organic farming in Japan, practicing pesticide-free and chemical fertilizer-free tea cultivation as early as the 1970s. To combat insect issues without relying on pesticides, the farmers ingeniously attracted beneficial creatures like spiders, bees, and praying mantises to the fields, creating a healthier ecosystem. They also diligently hand-plucked weeds to address weed growth without herbicides. Their unwavering efforts resulted in tea plants that were remarkably resilient and vibrant.

This tea comes from Katagi Kouka En, a family-owned tea business with a legacy spanning seven generations in Shiga, Japan. The tea field is nestled in central Japan, close to the scenic Lake Biwa, which is the largest lake in Japan. Since the 1970s, the tea has been cultivated using a pesticide-free and synthetic fertilizer-free approach. Fallen leaves and natural soil are used as organic fertilizers, fostering a sustainable and eco-friendly growing environment for the tea plants.

  • The Yabukita matcha has become the most popular type of tea variety in Japan for two main reasons. Also, it produces a strong vegetable flavor which a lot of tea lovers seek out when it comes to Japanese green tea.
