To evaluate the flavor of the Sencha Kagoshima we look for a combination of the aroma and also how the tea interacts with the palate. Does it produce a dryness, acidity, minerality, sweetness or umami? We’ll also evaluate the texture of the tea, otherwise known as mouthfeel. Finally, for sencha tea, we’ll evaluate it based on how vegetal the taste profile is as this is a common characteristic throughout most sencha teas. 

Step 1 - Observing the Appearance

This sencha kagoshima has darker green leaves with smaller leaf fragments, indicating that it is a deep steamed tea. 

Step 2 - Assessing the Aroma

The aroma coming off the leaves of the sencha kagoshima is extremely fruity, with notes of lychee, guava and passionfruit.

Step 3 - Tasting the Tea

The initial flavor of the Sencha Kagoshima Murasaki is light and sweet, but it quickly transforms into a savory and fruity flavor on the mid palate. You get a slight hint of mango, without as much acidity and a touch of banana as well. There is a smooth and sweet finish with the tiniest hint of dryness.

Step 4 - Evaluating the sensation on the palate

The mouthfeel of the Sencha Kagoshima Murasaki is medium to thick, allowing a lot of the sweeter and more fruity flavors to dominate the taste profile. There is a tiny hint of acidity and later dryness, but they are not too easy to spot.

The JAS acronym stands for Japanese Agriculture Standards, which is granted by the Japanese government to certify that products are grown without the use of pesticides or chemicals.

When we look for tea, it is crucial for us to verify that the tea fields are free from pesticides and chemicals. With the larger tea farms we work with, we like to look for the JAS label, as they are able to bear the cost for soil testing and sampling.

We like to support smaller tea farmers by acquiring their tea under the “pesticide-free” label. We aim to provide an opportunity for smaller tea farmers who produce exceptional tea while still maintaining our commitment to high quality tea.

How to prepare the tea

For the preparation of this Japan Sencha Kagoshima, it is recommended to use water at a lower temperature and a shorter brewing time. Because the Fukamushi Sencha Kagoshima Murasaki is a deep steamed tea, it is composed of smaller leaf particles and therefore it brews faster.

    Step 1

    First, heat the water to a temperature of 60 degrees Celsius or 140 degrees Fahrenheit. This will be the perfect temperature for this sencha kagoshima

    Step 2

    Put 5 grams of Sencha Kagoshima into a kyusu teapot, and then pour 150ml of the heated water over the leaves.

    Step 3

    Allow the tea to steep for 45 seconds without stirring. Due to its deep steaming, this Sencha Kagoshima doesn’t need quite as much time.

    After the brewing time is up, pour out the tea from the pot. The teapot's filter will prevent the leaves from entering your cup. Enjoy your tea!

    2nd brew

    Don't throw away your tea leaves after the first brewing! The Fukamushi Sencha Kagoshima Murasaki can be brewed 2-3 more times. Just add more hot water to the teapot and allow the leaves brew for 20 seconds each time you brew the tea. Each brewing will be slightly different and some people say that they actually prefer the second brewing!

Necessary teaware

To prepare a delicious cup of Sencha Kagoshima Murasaki, you may want a kyusu teapot. The best type of teapot for this tea is a Fukamushi teapot, which features a circular mesh filter that facilitates the straining of the tea leaves while pouring. Without this particular teapot, the Fukamushi Sencha may clog during pouring, resulting in over-brewing.

Alternative without teaware 

In case you’re not able to get a kyusu teapot, we suggest using a tea strainer to prepare Sencha Kagoshima. The strainer will separate the tea leaves while pouring, preventing over-brewing of the tea.

Information about the farm

As the name would suggest, the sencha kagoshima is grown in Kagoshima, Japan. Kagoshima is located on the Southernmost point of the island of Kyushu, one of the 4 main Japanese islands. This region is known for producing some of the best green teas in Japan and it benefits from rich volcanic soils and a mild subtropical climate.

The sencha kagoshima is made by Mr. Kawaji, a talented tea farmer in Southern Japan. Mr. Kawaji specializes in the production of deep steamed teas like the Asatsuyu and Murasaki. These teas are steamed for a longer time and during this longer steaming process the tea becomes greener and less bitter, with more of this steamed vegetable or slightly fruity flavor.

Cultivar and tea plant variety

The sencha kagoshima is made using the Yutaka Midori cultivar, the second most popular tea variety in Japan.

    The name of the Yutaka Midori cultivar means “abundant green” because of its vibrant green color and rich vegetal flavor. This makes the perfect cultivar for deep steamed sencha, which is a celebration of these flavors.
