To assess the flavor of Shizuoka Hojicha Kawabataen, we examine both the aroma and how it interacts with the palate. We evaluate whether it produces dryness, acidity, minerality, or sweetness. The Shizuoka Hojicha contains mostly leaves with a flat shape and dark brown color, but there are a few stems added in.

In addition, we also love working with smaller farms that may not have the resources for extensive soil testing and sampling. In such cases, we accept their tea under the "pesticide-free" label, providing them with opportunities to sell their exceptional quality tea. How to prepare the tea

For brewing the Shizuoka Hojicha, we recommend using a slightly higher temperature and a shorter brewing time. When it comes to shizuoka hojicha, sometimes it’s nice to brew the tea using hotter water to really get a strong flavor from it!

  • Step 1

    Heat water to a temperature of 80°C (175°F), which is the ideal temperature for the shizuoka hojicha kawabataen.

    Step 2

    Add 5 grams of shizuoka hojicha to your teapot and pour in 150ml of the heated water.

    Let the shizuoka hojicha brew in the water for 1 minute without disturbing the leaves. This allows the tea to release a nice roasted flavor and aroma into the water.

    After the brewing time is up, pour out the brewed shizuoka hojicha from the teapot. The teapot will automatically filter out the leaves and the stems so they don't end up in your cup. Enjoy your delicious cup of shizuoka hojicha!

    Don't let your Shizuoka Hojicha go to waste after the first brew! You can make multiple cups of tea from the same batch of green tea leaves. Just add hot water to the teapot again and let the leaves steep for a quick 20 seconds for subsequent infusions.

Alternative without teaware 

If you don’t have access to a kyusu teapot, the next best alternative when it comes to using the shizuoka hojicha is the tea strainer. This may not produce as good of a flavor compared to the kyusu, but at least it will keep the tea leaves from getting into your cup! You can always upgrade to better teaware later!

Information about the farm

This Shizuoka hojicha comes from Mr. Kawabata in Shizuoka. Mr. Kawabata has been able to develop these nice warmer notes of the Hojicha by roasting the tea leaves. During the roasting process, these leaves lose their grassy and vegetable notes in exchange for notes of coffee, caramel or even chocolate.

As the name would suggest, the Shizuoka Hojicha is grown and produced in Shizuoka, Japan. Shizuoka is the largest tea production region in Japan, responsible for around 40% of the country’s total tea production. The region benefits from a higher elevation, which is the perfect environment for growing tea plants as they can be exposed to both sun and shade throughout the day.

Cultivar and tea plant variety

This Shizuoka Hojicha is made from the Yabukita cultivar, the most common tea cultivar in Japan.

    Yabukita has become the most popular tea cultivar in Japan, making up 75% of the total tea produced. One of the reasons for this is that the tea plants are resistant to frost, making them well suited to the comparatively cold winters of central Japan. Another explanation for its popularity is the bold savory and steamed vegetable flavors it produces.
