The Nishi Gyokuro is a Saemidori gyokuro from Kagoshima produced by Mr. Toshimi Nishi. This tea opens with a smooth sweetness before moving into deep dashi-like umami, light florals and a clean mineral finish.

When tasting the Nishi Gyokuro, we focus on more than aroma and individual tasting notes. We look at how the tea settles on the palate: sweetness, umami, dryness, acidity, minerality and the depth of the mouthfeel. For gyokuro, we also pay close attention to the brothy character, as this is where the shaded Saemidori leaf really shows its quality.

Paso 1 - Observar la apariencia

The leaves of the Nishi Gyokuro are dark, glossy and tightly rolled into fine needle shapes. This deep color and compact structure are typical of carefully shaded gyokuro made from tender, high-quality leaves.

Paso 2 - Evaluación del aroma

Once the leaves are warmed and infused, they release a layered aroma of lilac, sea breeze and soft dashi broth. There is also a clean mineral note that gives the tea a fresh, almost limestone-like clarity.

Paso 3 - Degustación del té

The Nishi Gyokuro begins smooth and sweet, then quickly deepens into a rich brothy umami with notes of dashi. As the cup develops, light florals and mineral tones appear, leading into a dry, palate-cleansing finish.

This gyokuro has a refined, concentrated mouthfeel without becoming heavy. The umami fills the center of the palate, while the sweetness softens the edges. A gentle dryness and low acidity keep the finish clean and elegant rather than overwhelming.

The Nishi Gyokuro should be prepared with cooler water and a longer infusion than a standard sencha. This allows the sweet and savory compounds to unfold gently without pulling out too much bitterness. A lower temperature is especially important for preserving its dashi-like umami and delicate floral notes.

  • Paso 1

    Heat your water to 60 degrees Celsius, or 140 degrees Fahrenheit.

  • Paso 2

    Add 5 grams of Nishi Gyokuro to your kyusu teapot or shiboridashi.

  • Paso 3

    Pour in 150ml of water and let the leaves brew slowly for 2 minutes.

  • Paso 4

    After 2 minutes, pour out the tea completely so the leaves stop infusing. Enjoy the deep, sweet and savory first cup.

    The first infusion gives you the richest sweetness and umami, but the leaves still have plenty left to offer. For the second and third brewing, add water at the same temperature and steep for around 20 seconds. These later cups become lighter, cleaner and more mineral.

    Nishi Gyokuro also works beautifully as a cold brew. Add 5 grams of leaves to 500ml of cold water and let it infuse in the fridge for 3 to 6 hours. The result is smooth, sweet and almost broth-like, with very little bitterness.

To prepare this gyokuro, we recommend using a kyusu or a shiboridashi. A kyusu is practical for everyday brewing and filters the leaves easily, while a shiboridashi is ideal if you want a more concentrated gyokuro session. A simple tea strainer can work as well, but the flavor will be less deep and rounded.
