To evaluate the flavor of the Sencha Henta Kirishima Tea we look for a combination of the aroma and also how the tea interacts with the palate. Does it produce a dryness, acidity, minerality, sweetness or umami? We’ll also evaluate the texture of the tea, otherwise known as mouthfeel. Finally, for sencha tea, we’ll evaluate it based on how vegetal the taste profile is as this is a common characteristic throughout most sencha teas.Β 

Step 1 - Observing the Appearance

The leaves of the Sencha Henta Kirishima Tea are a dark shade of green, with a combination of tightly rolled needles and smaller leaf particles.Β 

Step 2 - Assessing the Aroma

The aroma coming off the dry leaves is starchy and sweet, with notes of saltine crackers, seaweed and a hint of lemon. The aroma of the leaves becomes a bit earthier as they are soaked and the tea begins to take on this vegetal flavor.

Step 3 - Tasting the Tea

The Sencha Henta Kirishima Tea draws you in with a thicker sweetness, which soon transforms into sweet corn and fresh cut grass. The tea has a citrusy acidity in the finish that lingers on the tongue and leaves the palate feeling refreshed and rejuvenated.

Step 4 - Evaluating the sensation on the palate

The mouthfeel of the Sencha Henta Kirishima Tea is a bit thicker, similar to the mouthfeel of a Gyokuro. Even though this tea has a strong taste profile to it, it carries no bitterness at all. The structure is complex, but not too sharp in any one flavor profile, making it perfectly balanced.

How to prepare the tea

To prepare this Kirishima tea, you can use a lower temperature water and a shorter brewing time, which will extract the sweeter components from the tea leaves. We’ll show you a step by step guide to help you prepare the perfect cup of tea.

    Step 1

    First, heat the water to a temperature of 70 degrees Celsius or 160 degrees Fahrenheit. This will be the perfect temperature for this kirishima tea

    Step 2

    Add 5 grams of the kirishima tea to your kyusu teapot and pour in 150ml of water

    Step 3

    Allow the tea leaves to brew in the water undisturbed for 1 minute. This will give the leaves enough time to unfurl and release their flavor into the waterΒ

    Step 4

    Once the brewing time is complete, you can now pour your kirishima tea, and the teapot will filter out the leaves on its own, ensuring that they do not make their way into your cup. Sit back and enjoy your tea!

    2nd brew

    Do not throw away the tea leaves after the first brewing! The Sencha Henta Kirishima Tea can be brewed an additional 2-3 times. You just have to pour more hot water into the teapot and let the leaves steep for 20 seconds during each subsequent infusion.

Necessary teaware

In order to prepare the perfect cup of kirishima tea, you may want to invest in a kyusu teapot. The best teapot to use for a tea like this is the Fukamushi teapot, which has a circular mesh filter that makes the tea less likely to clog during pouring. If the teapot clogs, you run the risk of the leaves staying in contact with the water for too long and overbrewing.

Alternative without teawareΒ 

If you don’t have a teapot at home, the next best thing is to use a tea strainer for the kirishima tea. This will separate the tea leaves as you pour so the leaves don’t end up in your cup of tea.Β

Information about the farm

This tea is of course grown by Mr. Henta, a talented farmer in Kirishima, Japan. When we met with Mr. Henta for the first time, he taught us so much about the intricacies of different tea plants.Β 

What was really interesting to us was his extensive knowledge of different tea plant varieties, also called cultivars. Each of these cultivars is a little bit different not only in terms of flavor, but also in how they grow.

Although Mr. Henta cultivates green tea on a very small field, he produces 8 different tea plant varieties in total. He has become an expert at blending these different tea plant varieties together to capture the best aspects of each.Β

As the name would suggest, this tea is grown on the kirishima tea fields in the far south of Japan. Because this is a volcanically active, subtropical region the kirishima tea fields benefit from rich soils and milder winters. This makes it easier to grow a diverse array of tea plant species that Mr. Henta uses in his different tea blends.

This kirishima tea is special because it is made by blending together 8 different cultivars. Each of these cultivars has different strengths, and it takes true skill to carefully blend them together so that the taste inherits the best aspects of each.
